To be an authentic Genoese pesto you should use the basil from Pra, extra virgin olive oil from Liguria, the Italian pine nuts, pecorino Fiore Sardo, Parmigiano Reggiano, the Vessalico garlic and coarse sea salt.

Chickpea farinata with smoked provolone and boiled ham
