Procedure
To prepare this fresh and tasty panzanella first thing you have to put to soak the bread in water acidulated with vinegar. The amount of vinegar to use, depends only on how much you like to strengthen the salad with its intense flavor and sour. While the bread is soft wash and peel the vegetables that you have selected, then cutting them thin. Squeeze the bread and, with a kitchen mixer chop it. Add the vegetables and season with oil. Let rest panzanella for 10-15 minutes and then add salt.

Titti is sister in law of my brother and this is his version of panzanella! I love it! This panzanella is far from the Tuscan panzanella or than that of the Salento, in which stale bread or Friselle are wet and topped with red onion, basil, olive oil, vinegar and salt. It is also different from that which often you eat in Rome in which the tomato cut into small pieces is laid on bruschetta. The panzanella of Titti is a personal review in which the bread is an ingredient of the mixture of salads and garden products that we like and that we have available.
